Yes lavender is edible. Although tequila, lime and lavender may seem like an odd combo the ingredients pair surprisingly well to make a delicious and refreshing summer cocktail. The key is in making the lavender simple syrup which is the main ingredient. Here is the recipe for lavender syrup from marthastuart.com
1 cup water
1/2 cup sugar
Bring to a boil water, sugar and lavender, stirring occasionally. Once at a boil, bring to a simmer for for 2 minutes. Strain though a fine sieve and let cool. Will keep for several weeks in the refrigerator if well-sealed.
2 ounces of silver tequila
the juice from half of a fresh lime
1 tablespoon of lavender syrup (buy some here if you don’t feel like making it)
Lightly wet the rim of a glass with lime and dip in plate of sugar and dried lavender. Fill the glass with ice and add lavender syrup, tequila, lime juice, and a splash of seltzer. Garnish with a sprig of lavender and sliced lime.
